Ingredients

  • 1 can crushed pineapple (20 ounces), drained slightly
  • 1 teaspoon vanilla extract
  • 2 large eggs, beaten
  • 1/4 cup milk
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon baking powder
  • 1/2 cup shredded coconut (optional)

Instructions

  1. Preheat the oven to 180°C (350°F) and lightly grease a small baking dish.
  2. In a mixing bowl whisk together the beaten eggs, milk, vanilla extract, melted butter, and sugar until smooth.
  3. In another bowl combine flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture and stir until a smooth batter forms.
  5. Fold in the crushed pineapple and shredded coconut if using.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Bake for 35–40 minutes until the top is lightly golden and the center is set.
  8. Allow the pineapple bake to cool slightly before serving.

Notes

  • Chopped nuts such as walnuts or almonds can be added for extra texture.
  • Sprinkle brown sugar on top before baking for a lightly caramelized crust.
