Ingredients
- 1 can crushed pineapple (20 ounces), drained slightly
- 1 teaspoon vanilla extract
- 2 large eggs, beaten
- 1/4 cup milk
- 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon baking powder
- 1/2 cup shredded coconut (optional)
Instructions
- Preheat the oven to 180°C (350°F) and lightly grease a small baking dish.
- In a mixing bowl whisk together the beaten eggs, milk, vanilla extract, melted butter, and sugar until smooth.
- In another bowl combine flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and stir until a smooth batter forms.
- Fold in the crushed pineapple and shredded coconut if using.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 35–40 minutes until the top is lightly golden and the center is set.
- Allow the pineapple bake to cool slightly before serving.
Notes
- Chopped nuts such as walnuts or almonds can be added for extra texture.
- Sprinkle brown sugar on top before baking for a lightly caramelized crust.
- Add a little lemon zest for a brighter citrus flavor.
- A pinch of cinnamon or nutmeg adds warmth to the dessert.
