Description
This soft and fluffy pandesal recipe uses the Tangzhong method to create a melt-in-your-mouth Filipino bread roll that stays fresh longer. Slightly sweet and ultra-tender, it’s perfect for breakfast, snacks, or sandwiches.
Ingredients
- Tangzhong (Flour Roux):
- 3 tbsp bread flour
- 1/2 cup water
- 1/2 cup milk
- Pandesal Dough:
- 3 cups bread flour
- 1/4 cup all-purpose flour
- 1/4 cup sugar
- 1 tsp salt
- 2 1/4 tsp instant yeast (1 packet)
- 1/2 cup warm milk
- 1/4 cup softened butter
- 1 egg
- 1/4 cup breadcrumbs (for coating)
Instructions
- Make the Tangzhong: In a saucepan, whisk bread flour, water, and milk until smooth. Cook over medium heat, stirring constantly until thickened into a paste (3–5 minutes). Let cool completely.
- Make the Dough: In a bowl, combine bread flour, all-purpose flour, sugar, and salt. In another bowl, dissolve yeast in warm milk. Add the cooled Tangzhong, yeast mixture, butter, and egg to the dry mix. Mix until a sticky dough forms.
- Knead for 10–12 minutes by hand or 8–10 minutes with a mixer until dough is smooth and elastic.
- First Proof: Place dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for 1–1.5 hours or until doubled in size.
- Shape the Rolls: Punch down the dough, divide into 12–16 equal pieces, shape into balls, and roll each in breadcrumbs. Arrange on a parchment-lined baking sheet.
- Second Proof: Cover and let rise again for 30–45 minutes until puffy.
- Bake: Preheat oven to 350°F (175°C). Bake for 18–20 minutes or until golden. Let cool slightly before serving.
Notes
- Add cheese inside each dough ball for a stuffed version.
- Use part whole wheat flour for a healthier option.
- Make mini rolls for snacks or party platters.
- Top with sesame seeds for extra flavor and texture.
