Description

Ingredients

  • 1 medium watermelon (about 9 pounds), peeled and cut into bite-size cubes
  • 1 cup sparkling lime water
  • 2 tablespoons fresh lime juice
  • 2 tablespoons honey
  • 1 teaspoon finely grated lime zest
  • 1/4 teaspoon sea salt (optional)

Instructions

  1. Cut the watermelon in half, remove the rind, and cut the flesh into bite-size cubes or small balls.
  2. Place the watermelon pieces in a large mixing bowl.
  3. In a small bowl combine sparkling lime water, fresh lime juice, honey, lime zest, and optional sea salt.
  4. Stir until the honey dissolves completely.
  5. Pour the citrus mixture over the watermelon cubes.
  6. Gently toss so all pieces are evenly coated.
  7. Cover the bowl and refrigerate for about 1 hour to allow the fruit to absorb the lime flavor.
  8. Transfer the watermelon bites to a serving dish.
  9. Spoon some of the citrus juice over the top and serve chilled.
