Ingredients
- 1 medium watermelon (about 9 pounds), peeled and cut into bite-size cubes
- 1 cup sparkling lime water
- 2 tablespoons fresh lime juice
- 2 tablespoons honey
- 1 teaspoon finely grated lime zest
- 1/4 teaspoon sea salt (optional)
Instructions
- Cut the watermelon in half, remove the rind, and cut the flesh into bite-size cubes or small balls.
- Place the watermelon pieces in a large mixing bowl.
- In a small bowl combine sparkling lime water, fresh lime juice, honey, lime zest, and optional sea salt.
- Stir until the honey dissolves completely.
- Pour the citrus mixture over the watermelon cubes.
- Gently toss so all pieces are evenly coated.
- Cover the bowl and refrigerate for about 1 hour to allow the fruit to absorb the lime flavor.
- Transfer the watermelon bites to a serving dish.
- Spoon some of the citrus juice over the top and serve chilled.
