Ingredients
- 220 g all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 150 g softened butter (room temperature)
- 100 g brown sugar
- 50 g granulated white sugar
- 1 large egg (room temperature)
- 1 tsp vanilla extract
- 150 g white chocolate, chopped or chips
- 50 g freeze-dried raspberries, roughly broken up
Instructions
- In a bowl, mix together the flour, baking powder, and salt.
- In a separate large bowl, cream the softened butter with both sugars until light and fluffy.
- Beat in the egg and vanilla extract until fully combined.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Gently fold in the white chocolate and freeze-dried raspberries.
- Cover and chill the dough in the fridge for at least 30 minutes to 2 hours.
- Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Shape dough into 3–4 cm balls and place on the baking sheet. Press lightly if desired.
- Bake for 9–12 minutes until edges are golden and centers look soft.
- Let cookies rest on the tray for 5–10 minutes, then transfer to a wire rack to cool.
