Ingredients
- 2 1/4 cups all-purpose flour
- 1 1/2 cups sugar
- 3 1/2 teaspoons baking powder

- 3 large eggs, room temperature
- 1 cup milk, room temperature
- 1/2 cup sour cream, room temperature
- 2 tablespoons cooking oil

- 3 cups confectioners’ sugar
- 3/4 cup unsweetened cocoa powder
- 1 teaspoon espresso powder (optional)
- 1 cup butter, softened
- 2 teaspoons vanilla extract
- 2 to 4 tablespoons heavy cream
- 1 pinch salt (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line two muffin tins with 18 cupcake liners.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Add eggs, milk, sour cream, oil, and vanilla extract to the dry ingredients and mix until smooth.
- Pour in the melted and cooled butter and mix until the batter is fully combined.
- Divide the batter evenly among cupcake liners, filling each about two-thirds to three-quarters full.
- Bake for 15 to 18 minutes or until a toothpick inserted into the center comes out clean.
- Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- To make frosting, sift together confectioners’ sugar, cocoa powder, and espresso powder if using.
- In another bowl, beat softened butter for 2–3 minutes until light and fluffy.
- Add vanilla extract and mix again.
- Gradually add the dry ingredients alternating with heavy cream while mixing.
- Beat until the frosting becomes smooth and creamy. Adjust with more cream or sugar as needed.
- Once cupcakes are completely cool, spread or pipe the chocolate frosting on top and decorate if desired.

- Use room temperature eggs, milk, and sour cream for a smoother batter.
- Do not overfill cupcake liners to prevent overflowing while baking.
- Allow cupcakes to cool completely before frosting.
