Description

Tender yogurt marinated chicken made with a creamy Greek yogurt marinade blended with garlic, lemon, herbs, and warm spices for a juicy and flavorful Mediterranean-inspired dish.


Ingredients

  • to 2 pounds chicken cutlets (about 8 pieces)
  • 1/2 cup plain full fat Greek yogurt
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • 1 lemon, juiced (about 1/4 cup)
  • 1 teaspoon lemon zest
  • 5 garlic cloves, minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon coriander
  • 1/4 teaspoon ground cumin

Instructions

  1. In a large bowl, whisk together the Greek yogurt, olive oil, honey, lemon juice, lemon zest, minced garlic, chopped parsley, salt, black pepper, paprika, onion powder, oregano, basil, cayenne pepper, coriander, and cumin until smooth.
  2. Add the chicken cutlets to the bowl and toss until each piece is fully coated in the marinade.
  3. Cover the bowl and refrigerate for at least 1 hour or up to 24 hours for best flavor.
  4. Remove the chicken from the refrigerator about 20 minutes before cooking to allow it to come closer to room temperature.
  5. Choose your cooking method. For pan frying, heat 1 tablespoon olive oil in a skillet over medium heat and cook the chicken for 5–7 minutes per side until golden and cooked through.
  6. For air frying, preheat the air fryer to 380°F (193°C) and cook the chicken in a single layer for 12–15 minutes, flipping halfway through.
  7. For oven baking, preheat the oven to 400°F (200°C), place the chicken on a lined baking sheet, and bake for 20–25 minutes until fully cooked.
  8. Allow the chicken to rest for a few minutes before slicing and serving.

Notes

  • Marinating the chicken longer (up to 24 hours) results in deeper flavor and tenderness.
  • Chicken thighs can be used instead of cutlets for juicier results.
  • The marinade also works well with tofu or cauliflower for a vegetarian option.
  • Grilling the chicken adds a delicious smoky flavor.
