Ingredients
- 1 1/4 cups all-purpose flour
- 1/4 tsp salt
- 1 tsp baking powder
- 1 egg
- 3/4 cup white sugar
- 1 cup fresh milk or evaporated milk
- 1/2 cup cooking oil
- 1/2 tbsp vanilla flavor
Instructions
- Preheat oven to 350°F (175°C). Line a muffin pan with cupcake liners.
- Sift together flour, salt, and baking powder in a bowl.
- In another bowl, beat egg and sugar until light and fluffy.
- Add milk, oil, and vanilla flavor to the egg mixture and mix well.
- Gradually fold in dry ingredients until just combined. Do not overmix.
- Pour batter into liners, filling each about 2/3 full.
- Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
- Cool completely before serving or frosting.
Notes
- Add chocolate chips or sprinkles to the batter for fun.
- Top with buttercream, whipped cream, or chocolate frosting for extra indulgence.
- Swap vanilla with almond or coconut extract for a twist.
- Use melted butter instead of oil for a richer flavor, though texture may be denser.
