Description

A zesty and elegant citrus cocktail featuring bright yuzu and lemon juice balanced with simple syrup and a silky egg white foam. It’s a sophisticated yet simple drink perfect for any occasion.

Ingredients

  • 2 ounces base spirit (e.g., gin, vodka, or whiskey)
  • 1 ounce freshly squeezed lemon juice
  • 1 ounce yuzu juice
  • ½ ounce simple syrup
  • 1 egg white

Instructions

  1. Add the base spirit, lemon juice, yuzu juice, simple syrup, and egg white to a cocktail shaker.
  2. Dry shake (without ice) for 10 seconds to emulsify and create foam.
  3. Add ice to the shaker and shake again until well chilled.
  4. Strain into a chilled cocktail glass and serve immediately.

Notes

  • For a vegan option, replace the egg white with aquafaba (chickpea brine).
  • Substitute yuzu with a blend of lemon and lime or grapefruit if unavailable.
  • Chill your glass beforehand for a crisp presentation.
  • Adjust sweetness by varying the amount of simple syrup.
