Description
Light, crispy-on-the-outside, tender-on-the-inside zucchini garlic bites—perfect as a healthier baked appetizer or snack that’s packed with savory flavor and easy to make.
Ingredients
- 2 medium zucchinis, grated and drained
- 1/2 teaspoon salt
- 1 large egg, beaten
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- After grating the zucchinis, sprinkle with salt and let sit for 10 minutes. Squeeze out excess moisture using a clean kitchen towel or cheesecloth.
- In a bowl, mix the drained zucchini with beaten egg, Parmesan, breadcrumbs, garlic, parsley, and black pepper until evenly combined.
- Scoop tablespoon-sized portions, roll into balls, and place them on the prepared baking sheet.
- Bake for 20–25 minutes, until golden and crispy on the outside.
- Serve warm, optionally with dips like marinara or creamy garlic sauce.
Notes
- For a spicy kick, add red pepper flakes to the mixture.
- Mix in shredded mozzarella for a cheesy twist.
- Italian seasoning enhances the herb flavor.
- Use almond flour instead of breadcrumbs for a gluten-free version.
- Air fryer option: bake at 375°F for 10–12 minutes, flipping halfway through for extra crispiness.
