Description

This viral 2-ingredient Japanese cheesecake is a creamy no-bake dessert made with thick yogurt and crunchy cookies. As the cookies soften while chilling, they create a texture similar to classic cheesecake with layers of creamy filling and tender crust.

Ingredients

  • 1/2 cup thick dairy-free yogurt, such as Culina Bourbon Vanilla or Cocojune Unsweetened Vanilla
  • 7 gluten-free cinnamon Sweet Thins cookies
  • Optional Add-Ins:
  • 1 tablespoon maple syrup
  • Fresh raspberries
  • Fresh strawberries
  • Fresh cherries
  • Optional Variations:
  • Chocolate Sweet Thins cookies
  • Lemon Sweet Thins cookies
  • Crushed cookies for a bottom crust layer
  • Chia jam swirl
  • Melted dairy-free chocolate drizzle

Instructions

  1. If desired, stir maple syrup into the yogurt for extra sweetness.
  2. Spoon the yogurt into a small glass jar, ramekin, or dessert cup.
  3. Smooth the top gently with the back of a spoon.
  4. Insert the cookies into the yogurt at a slight angle, arranging about 5 in the center and 2 along the sides.
  5. Press the cookies down gently so they are mostly submerged in the yogurt.
  6. Cover the container and refrigerate for at least 3 to 4 hours or overnight for the best texture.
  7. Garnish with fresh berries or cherries before serving if desired.
  8. Serve chilled directly from the jar.

Notes

  • Overnight chilling creates the creamiest cheesecake-like texture.
  • Use thick yogurt for best results and richer consistency.
  • Greek yogurt can be used if dairy-free is not required.
  • Thin crispy cookies soften best during chilling.
  • Add jam, fruit, or chocolate for extra flavor variations.
  • This dessert is best served cold and should not be reheated.
  • Store covered in the refrigerator for up to 2 days.
  • Freezing is not recommended because yogurt texture may become grainy.
