Description

Ingredients

  • 2 medium zucchini, shredded
  • 1 teaspoon salt
  • 1 large egg
  • 1/3 cup all-purpose flour
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 green onion, finely sliced
  • Cooking spray or light oil spray
  • Sour cream for serving (optional)

Instructions

  1. Wash and shred the zucchini using a box grater.
  2. Place the shredded zucchini in a strainer and sprinkle with salt.
