Description

Juicy grilled chops coated in a sweet and tangy apricot glaze, paired with caramelized fruit for a quick and flavorful meal.


Ingredients

  • 1/2 cup apricot jam
  • 3 tablespoons white vinegar
  • 1 clove garlic, minced
  • 1/4 teaspoon salt, plus more for seasoning
  • 1/4 teaspoon black pepper, plus more for seasoning
  • 4 thick bone-in chops
  • 6 apricots, halved and pits removed
  • 1 tablespoon olive oil

Instructions

  1. In a small bowl, mix apricot jam, vinegar, garlic, salt, and pepper until smooth.
  2. Preheat grill on high heat for about 10 minutes.
  3. Pat chops dry and season both sides with salt and pepper.
  4. Reduce grill heat to medium and cook chops for 5 minutes on one side.
  5. Brush apricot halves with olive oil and place on indirect heat.
  6. Flip chops and begin brushing with glaze.
  7. Continue flipping and glazing every minute for about 5 minutes until caramelized.
  8. Remove from grill and let rest for 5 minutes.
  9. Serve with grilled apricots.

  • Let meat rest before serving to retain juices.
  • Adjust cooking time for boneless cuts.
  • Peaches or nectarines can be used instead of apricots.
