Description

These baked chicken stuffed pockets are crispy on the outside and creamy on the inside, filled with seasoned ground chicken, spinach, tomato, and melted cheese for a comforting and protein-packed meal.


Ingredients

  • 500 g ground chicken
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika powder
  • 1 tsp garlic powder
  • 1/2 tsp chili flakes
  • 4 tsp cream cheese
  • 1 cup fresh spinach, finely chopped
  • 1 medium tomato, thinly sliced
  • 4 tbsp mozzarella cheese, grated
  • 2 tbsp olive oil
  • 4 tbsp panko breadcrumbs
  • 3 tbsp grated Parmesan cheese

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a large bowl, combine ground chicken, salt, black pepper, paprika powder, garlic powder, and chili flakes.
  3. Mix until the seasonings are evenly incorporated.
  4. Divide the chicken mixture into 4 equal portions and flatten each into a thin round disc.
  5. Spread 1 teaspoon of cream cheese onto each disc.
  6. Add chopped spinach, tomato slices, and 1 tablespoon mozzarella cheese to the center.
  7. Fold each disc in half to form a pocket and seal the edges firmly.
  8. Brush each pocket lightly with olive oil.
  9. In a small bowl, mix panko breadcrumbs and Parmesan cheese, then coat the pockets evenly.
  10. Place the pockets on the prepared tray and bake for 20 to 25 minutes until golden brown and fully cooked.
  11. Allow the pockets to rest for a few minutes before serving.

Notes

  • Wet your hands slightly if the chicken mixture feels sticky while shaping.
  • Do not overfill the pockets to prevent them from opening during baking.
  • Ground turkey can be used instead of chicken.
  • For a low-carb option, use almond flour instead of panko breadcrumbs.
  • Store leftovers in the refrigerator for up to 3 days.
  • Air fry at 180°C (350°F) for 15 to 18 minutes if preferred.
