Description

Flaky puff pastry sausage rolls filled with savory beef sausage meat, earthy mushrooms, and a mild kick of horseradish for a flavorful twist on the classic British snack.


Ingredients

  • 2 tablespoons olive oil
  • 1 garlic clove, crushed
  • 1/2 teaspoon salt
  • 300g chestnut mushrooms, thinly sliced
  • 3 tablespoons horseradish purée
  • 800g beef sausages, skins removed
  • 500g ready-made puff pastry
  • 1 free-range egg, beaten
  • Plain flour, for dusting

Instructions

  1. Heat the olive oil in a medium saucepan over medium heat. Add the crushed garlic, salt, and sliced mushrooms. Cook slowly, stirring occasionally, until all moisture has evaporated and the mushrooms are concentrated in flavor, about 10–12 minutes.
  2. Transfer the mushroom mixture to a bowl and allow it to cool completely.
  3. Stir the horseradish purée into the cooled mushrooms. Add the beef sausage meat and mix thoroughly until evenly combined.
  4. Preheat the oven to 200°C (180°C fan) or Gas Mark 6. Line a large baking tray with baking paper.
  5. Lightly dust a clean work surface with flour. Roll out the puff pastry into a rectangle approximately 25x35cm. Cut lengthways into three equal strips and roll each strip slightly wider.
  6. Divide the beef filling into three equal portions. Shape one portion into a long sausage shape along one side of a pastry strip. Brush the opposite edge with beaten egg.
  7. Roll the pastry over the filling and press the edges together firmly to seal. Repeat with the remaining pastry and filling.
  8. Cut each long roll into 8–10 smaller sausage rolls and arrange seam-side down on the prepared tray.
  9. Brush the tops generously with beaten egg.
  10. Bake for 15–20 minutes until the pastry is puffed, crisp, and deeply golden brown.
  11. Allow the sausage rolls to cool for 10 minutes before serving.

  • Cooling the mushroom mixture helps keep the pastry crisp.
  • These sausage rolls freeze well before or after baking.
  • Reheat in the oven rather than the microwave for the best texture.
  • Add grated cheddar cheese for extra richness.
  • Sprinkle sesame or nigella seeds on top before baking for added texture.
