Ingredients

  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder

  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil

  • 1 cup boiling water
  • 1/2 cup butter, softened

  • 1/3 cup unsweetened cocoa powder
  • 2 teaspoons vanilla extract
  • 3 to 4 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients and beat until smooth.
  4. Carefully stir in the boiling water until fully combined. The batter will be thin.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. To make the frosting, beat the softened butter until creamy.
  9. Gradually mix in the powdered sugar and cocoa powder on low speed.
  10. Add the vanilla extract and milk, one tablespoon at a time, until the frosting becomes smooth and spreadable.
  11. Spread frosting over the first cake layer, place the second layer on top, and frost the top and sides evenly.
