Description

These chocolate protein pancakes are fluffy, rich, and packed with plant-based protein, making them a satisfying vegan breakfast perfect for meal prep or busy mornings.


Ingredients

  • 1 ripe banana
  • 3 cups soy milk
  • 4 teaspoons apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 ⅔ cups all-purpose flour
  • ⅔ cup vegan chocolate protein powder
  • ½ cup cacao powder
  • 2 tablespoons baking powder
  • Optional: strawberries

  • Optional: raspberries
  • Optional: coconut flakes
  • Optional: chocolate chips
  • Optional: peanut butter
  • Optional: peanuts
  • Optional: coconut yogurt
  • Optional: almond butter

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease four oven-safe bowls or baking containers.
  2. In a small bowl, mash the banana until smooth.
  3. Add the soy milk, apple cider vinegar, and maple syrup to the mashed banana and stir well.
  4. In a large bowl, whisk together the flour, vegan chocolate protein powder, cacao powder, and baking powder.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Divide the batter evenly among the prepared baking containers.
  7. Add your favorite toppings directly onto the batter.
  8. Bake for 30 minutes or until the centers are set and a toothpick comes out mostly clean.
  9. Allow the pancake bowls to cool slightly before serving.
  10. Top with coconut yogurt, almond butter, or additional toppings if desired.
