Description

Decadent chocolate cookies filled with a creamy cheesecake center and loaded with crunchy cookie pieces and chocolate chips for a rich, bakery-style treat.


Ingredients

  • Cream cheese filling:
  • 1/2 cup (125 g) cream cheese
  • 1/4 cup (35 g) icing sugar
  • 1/4 teaspoon vanilla extract
  • Cookie dough:
  • 1/2 cup (113 g) cold butter
  • 1/4 cup (50 g) granulated sugar
  • 1/2 cup (100 g) brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (150 g) all-purpose flour
  • 1/2 cup (55 g) cake flour
  • 1 tablespoon (7.5 g) cornstarch
  • 1/4 cup (30 g) black cocoa powder
  • 1 1/2 teaspoons (8 g) baking powder
  • 1/2 teaspoon (3 g) baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped sandwich cookies
  • 1/2 cup white chocolate chips
  • 1/2 cup semi-sweet chocolate chips
  • Topping:
  • Extra chocolate pieces
  • Extra crushed sandwich cookies

Instructions

  1. Prepare the filling by beating cream cheese until smooth, then mix in icing sugar and vanilla extract.
  2. Scoop small portions onto a lined tray and freeze for 30–45 minutes until firm.
  3. In a bowl, beat cold butter with granulated and brown sugar for about 2 minutes.
  4. Add egg and vanilla extract, mixing until combined.
  5. In another bowl, whisk together flours, cornstarch, cocoa powder, baking powder, baking soda, and salt.
  6. Gradually mix dry ingredients into wet ingredients to form dough.
  7. Fold in chopped sandwich cookies and chocolate chips.
  8. Scoop dough, flatten slightly, and place frozen filling in center.
  9. Cover with more dough and seal edges completely.
  10. Place on a lined tray and add extra toppings.
  11. Chill assembled cookies for 20 minutes.
  12. Preheat oven to 180°C.
  13. Bake for 12–15 minutes until edges are set and centers soft.
  14. Cool on tray before transferring to a rack.

Notes

  • Freezing the filling prevents it from melting too quickly.
  • Chill dough if it becomes too soft.
  • Use regular cocoa powder if black cocoa is unavailable.
  • Seal edges well to prevent filling leakage.
  • Store in refrigerator for up to 5 days.
  • Reheat briefly for a soft, gooey center.
