Description

This creamy mango pudding is a smooth, refreshing no-bake dessert packed with tropical mango flavor. Made with ripe mango pulp, milk, cream, and gelatin, it has a silky texture that melts in your mouth and is perfect for warm days, family dinners, or special occasions.

Ingredients

  • 2 cups ripe mango pulp (fresh, canned, or thawed frozen mango blended smooth)
  • 1 cup whole milk
  • 1 tbsp unflavored gelatin
  • 3 tbsp water
  • 1 cup heavy cream, cold
  • 1/4 cup granulated sugar (adjust to taste)
  • 1 tsp vanilla extract
  • Fresh mango cubes for garnish (optional)
  • Mint leaves for garnish (optional)

Instructions

  1. In a small bowl, combine the unflavored gelatin and water. Stir gently and let it sit for about 5 minutes until the gelatin blooms and becomes thick.
  2. In a saucepan over medium-low heat, add the milk and sugar. Stir continuously until the sugar dissolves completely. Do not allow the milk to boil.
  3. Add the bloomed gelatin to the warm milk mixture. Stir well until the gelatin fully dissolves and the mixture becomes smooth.
  4. Remove the saucepan from the heat and let the mixture cool slightly for about 5 minutes.
  5. In a large mixing bowl, combine the mango pulp and vanilla extract. Slowly pour in the milk and gelatin mixture while whisking gently.
  6. In another chilled bowl, whip the cold heavy cream until slightly thick and creamy. Avoid whipping to stiff peaks.
  7. Fold the whipped cream gently into the mango mixture until fully combined and smooth.
  8. Pour the pudding mixture evenly into serving glasses, ramekins, or a large dessert dish.
  9. Refrigerate for at least 4 hours or until fully set.
  10. Before serving, garnish with fresh mango cubes or mint leaves if desired.

Notes

  • Use ripe, sweet mangoes for the best flavor and natural sweetness.
  • Adjust the sugar depending on the sweetness of the mango pulp used.
  • Do not boil the milk after adding gelatin, as excessive heat may affect the setting process.
  • Whip the cream only until slightly thickened for a smooth pudding texture.
  • Canned mango pulp may already contain sugar, so taste before adding extra sugar.
  • Agar-agar can be used instead of gelatin for a vegetarian version, though the texture may be firmer.
  • Keep the pudding chilled until serving for the best consistency.
