Ingredients
- 3 large 8-inch flour tortillas
- 1 pound lean ground turkey
- 1 can (14 ounces) black beans, drained and rinsed
- 1/2 cup jarred salsa
- 1 cup quick pico
- 1 1/2 cups grated cheddar cheese
- 1 tablespoon olive oil
- 2 teaspoons ground cumin
- 2 teaspoons smoked paprika
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon freshly cracked black pepper
- 2 cups cherry tomatoes, quartered
- 1/2 sweet onion, finely diced
- 1/4 cup fresh cilantro, chopped
- Juice of 1/2 lime
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Shredded lettuce, optional
- Sour cream or Greek yogurt, optional
- Pickled onions, optional
- Extra cilantro, optional
- Crumbled cotija-style cheese, optional
Instructions
- Preheat the oven to 425°F and lightly brush a large baking sheet with olive oil.
- Heat a skillet over medium heat. Add the ground turkey and break it apart with a wooden spoon.
- Season the turkey with cumin, smoked paprika, chili powder, garlic powder, salt, and black pepper. Cook for 7 to 9 minutes until browned and fully cooked.
- In a bowl, combine the cherry tomatoes, diced onion, cilantro, lime juice, salt, and black pepper to make the quick pico.
- Lay the tortillas on the prepared baking sheet.
- Sprinkle a layer of cheddar cheese on one half of each tortilla.
- Add the cooked turkey, black beans, salsa, and quick pico over the cheese.
- Top with more cheddar cheese and fold the tortillas over the filling.
- Brush the tops lightly with olive oil.
- Bake for 8 minutes, then carefully flip the quesadillas.
- Bake for another 7 to 8 minutes until golden brown and crispy.
- Let rest for 2 minutes before slicing and serving with desired toppings.
Notes
- Do not overfill the tortillas to prevent the filling from spilling out.
- Brushing the tortillas with oil helps them crisp beautifully in the oven.
- Flour tortillas work best for folding and crisping.
- Reheat leftovers in the oven or air fryer to maintain crispness.
