Description

A tender and flavorful crockpot meatloaf infused with rich caramelized onions, savory beef broth, and topped with melted Swiss cheese for a comforting and hearty meal.


Ingredients

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 large onion, thinly sliced
  • 2 large eggs
  • 1/2 cup milk
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef broth
  • 1 1/2 cups shredded Swiss cheese
  • 2 tablespoons butter

Instructions

  1. In a skillet over medium heat, melt butter and cook sliced onions until soft and caramelized (15–20 minutes).
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, eggs, milk, garlic, salt, pepper, thyme, onion powder, and Worcestershire sauce. Mix gently.
  3. Shape the mixture into a loaf.
  4. Place caramelized onions at the bottom of the crockpot and set the meatloaf on top.
  5. Pour beef broth around the sides of the meatloaf.
  6. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  7. About 20 minutes before serving, sprinkle Swiss cheese over the meatloaf.
  8. Cover again and let cheese melt completely.
  9. Carefully remove, slice, and serve with onions and juices.

Notes

  • Use 80% lean ground beef for best moisture and flavor.
  • Do not overmix the meat to avoid a dense texture.
  • Substitute Swiss cheese with Gruyère for a richer taste.
  • Add mushrooms to the onions for extra depth.
