Ingredients
- 1 cup roasted peanuts (unsalted, skins removed)
- 3/4 cup sugar (150 g)
- 2 tablespoons water
- 1 tablespoon butter
- 1/4 teaspoon baking soda
- 1/2 teaspoon vanilla extract (optional)
- Pinch of salt
Instructions
- Prepare a baking sheet lined with parchment paper or lightly grease a surface and set aside.
- In a medium saucepan, combine sugar and water over medium heat. Stir gently until the sugar dissolves.
- Stop stirring and let the mixture cook undisturbed until it turns a golden amber color.
- Add the roasted peanuts and stir quickly to coat evenly.
- Stir in the butter until fully melted and combined.
- Remove from heat and quickly mix in the baking soda, vanilla extract (if using), and salt. The mixture will foam.
- Immediately pour onto the prepared baking sheet and spread into a thin, even layer.
- Allow to cool completely at room temperature.
- Break into pieces and serve.

- Work quickly after adding baking soda as the mixture hardens fast.
- Use other nuts like almonds or cashews for variation.
- Sprinkle flaky salt on top for a sweet-salty flavor.
- Store in an airtight container at room temperature for up to 2 weeks.
