Description
A comforting one-pot Dublin Coddle made with halal sausages, tender potatoes, caramelized onions, leeks, and hearty vegetables simmered in rich broth until warm and flavorful.
Ingredients
- 8 halal beef or chicken sausages
- 2 large yellow onions, peeled and thickly sliced
- 2 cleaned leeks, sliced with green tops removed
- 4 garlic cloves, finely minced
- 2 cups carrots, peeled and sliced into quarter moons
- 8 cups chicken stock
- 3 pounds Yukon gold potatoes, peeled and sliced 1/4-inch thick
- 2 tablespoons unsalted butter, melted
- 2 tablespoons chopped fresh Italian parsley
- 1 1/2 teaspoons coarse salt
- 1 teaspoon freshly cracked black pepper
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large Dutch oven over medium heat.
- Add sausages and sear on all sides until lightly browned.
- Remove sausages and set aside.
- Add onions and leeks to the same pot and sauté with a pinch of salt for 5–6 minutes.
- Reduce heat and continue cooking for 10–12 minutes until onions are caramelized.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add carrots and cook for another 4–5 minutes.
- Return sausages to the pot and arrange evenly over vegetables.
- Pour in chicken stock and season with salt and black pepper.
- Arrange potato slices in overlapping layers on top.
- Cover and simmer gently for about 1 hour until potatoes are tender.
- Preheat oven to 450°F.
- Remove lid and drizzle melted butter over potatoes.
- Transfer pot to oven and roast uncovered for 15–20 minutes until potatoes are golden.
- Let rest for several minutes before serving.
- Garnish with fresh parsley and serve warm.
