Description

This easy oven-baked spelt bread is soft, fluffy, and made with wholesome vegan ingredients for a delicious homemade loaf with a mild nutty flavor.


Ingredients

  • 1/4 cup warm water
  • 2 tablespoons maple syrup
  • 2 1/4 teaspoons dry active yeast
  • 1 cup unsweetened almond milk
  • 1/3 cup olive oil, plus 1 teaspoon for greasing
  • 1 teaspoon sea salt
  • 4 cups sprouted spelt flour

Instructions

  1. In a large bowl, whisk together warm water and maple syrup.
  2. Sprinkle in the dry active yeast, stir gently, and let sit for 10 minutes until foamy.
  3. Add almond milk, olive oil, and sea salt, then stir to combine.
  4. Mix in 2 1/2 cups of spelt flour until a sticky dough forms.
  5. Gradually add the remaining flour while kneading for 8 to 10 minutes until the dough becomes soft and smooth.
  6. Lightly oil a clean bowl and place the dough inside, turning it to coat.
  7. Cover and let rise in a warm place for 1 hour or until doubled in size.
  8. Grease and line an 8.5 x 4.5-inch loaf pan with parchment paper.
  9. Shape the dough into a rectangle and place it into the loaf pan.
  10. Cover and let rise again for 30 minutes until puffy.
  11. Preheat the oven to 375°F (190°C), then reduce the temperature to 350°F (180°C) before baking.
  12. Bake for approximately 40 minutes, rotating the pan halfway through baking.
  13. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Lukewarm water helps activate the yeast properly.
  • Whole spelt flour can be used, though the bread may be denser.
  • Oat milk or soy milk can replace almond milk.
  • Slice the loaf before freezing for easier storage.
