Description

A silky and elegant Italian panna cotta dessert made with creamy vanilla-infused cream and topped with a vibrant raspberry coulis and fresh berries.


Ingredients

  • 600 ml heavy cream
  • 90 g white sugar
  • 6 g gelatin leaves
  • 1 teaspoon vanilla extract
  • 250 g fresh raspberries
  • 50 g sugar
  • 1 lemon, zested and juiced
  • Fresh mint leaves for garnish
  • Fresh blueberries or raspberries for serving

Instructions

  1. Place the gelatin leaves in a bowl of cold water and allow them to soften.
  2. Pour the heavy cream into a saucepan and heat over medium-low heat.
  3. Add the sugar and whisk until fully dissolved.
  4. Stir in the vanilla extract and continue heating until small bubbles form around the edges without boiling.
  5. Remove the gelatin leaves from the water, squeeze out excess liquid, and add them to the warm cream mixture.
  6. Stir until the gelatin completely dissolves and the mixture is smooth.
  7. Pour the mixture into serving glasses or ramekins.
  8. Refrigerate for at least 3 hours or overnight until fully set.
  9. For the raspberry coulis, combine raspberries, sugar, lemon zest, and strained lemon juice in a saucepan over medium heat.
  10. Cook while gently mashing the raspberries until softened and slightly thickened.
  11. Strain the mixture through a fine sieve to remove the seeds.
  12. Chill the coulis until cold.
  13. Before serving, spoon raspberry coulis over the panna cotta and garnish with fresh berries and mint leaves.
  14. If unmolding, dip the ramekin base into hot water for a few seconds before inverting onto a plate.

Notes

  • Do not boil the cream to maintain a silky smooth texture.
  • Overnight chilling gives the best flavor and consistency.
  • Powdered gelatin can be used instead of gelatin leaves.
  • Store covered in the refrigerator for up to 4 days.
  • Keep the coulis separate until serving for the freshest presentation.
  • Freezing is not recommended as it can alter the creamy texture.
