Ingredients

  • 3/4 cup vegan avocado dressing
  • 2 heads romaine lettuce, chopped (about 5 cups or 240 g)
  • 1 can black beans, drained and rinsed
  • 1 can yellow corn, drained
  • 1 red bell pepper, thinly sliced
  • 1 cup red onion, thinly sliced
  • 1 large tomato, diced
  • 1/2 cup crushed tortilla chips
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/2 cup vegan shredded cheese (optional)
  • 1/3 cup salsa or pico de gallo (optional)
  • 1 lime, cut into wedges (optional)
  • 1 cup roasted sweet potatoes (optional)
  • 1 small jalapeƱo, sliced (optional)

Instructions

  1. Wash the romaine lettuce thoroughly and chop it into bite-sized pieces. Dry well using a salad spinner or kitchen towel.
  2. Add the chopped lettuce to a large salad bowl.
  3. Thinly slice the red bell pepper and red onion, then dice the tomato.
  4. Add the bell pepper, onion, and tomato to the bowl.
  5. Drain the corn and rinse the black beans thoroughly under cold water.
  6. Add the corn and black beans to the salad mixture.
  7. Pour the vegan avocado dressing over the salad.
  8. Toss everything together until evenly coated.
  9. Sprinkle crushed tortilla chips on top.
  10. Finish with optional toppings like cilantro, vegan cheese, salsa, jalapeƱos, roasted sweet potatoes, or lime wedges before serving.
