Description

Egg Roll Bowls with Chicken and Cabbage are a quick and flavorful one-pan meal packed with tender chicken, crunchy cabbage, carrots, and savory Asian-inspired seasonings. This healthy take on classic egg rolls is perfect for busy weeknights and ready in just 15 minutes.

Ingredients

  • 1 pound boneless, skinless chicken breast, diced
  • 4 cups shredded cabbage, green or mixed purple and green
  • 1 cup grated carrots
  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon sesame oil
  • 1 teaspoon ground ginger or 1 tablespoon fresh grated ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon sesame seeds for garnish (optional)
  • Fresh cilantro for garnish (optional)
  • Sriracha for serving (optional)

Instructions

  1. Heat the sesame oil in a large skillet over medium-high heat.
  2. Add the diced chicken breast and season with salt and black pepper.
  3. Cook for 5 to 7 minutes, stirring occasionally, until the chicken is golden and fully cooked.
  4. Add the minced garlic, shredded cabbage, grated carrots, and chopped green onions.
  5. Cook for 3 to 5 minutes until the vegetables are slightly tender but still crisp.
  6. Stir in the soy sauce and ginger, mixing well to combine all the flavors.
  7. Taste and adjust seasoning with additional soy sauce, salt, or pepper if needed.
  8. Remove from heat and serve immediately.
  9. Garnish with sesame seeds, cilantro, or Sriracha if desired.

Notes

  • Ground chicken, turkey, shrimp, tofu, or beef can replace diced chicken breast.
  • Use tamari instead of soy sauce for a gluten-free version.
  • Pre-shredded coleslaw mix works as a quick shortcut.
  • Add mushrooms, broccoli, snap peas, or zucchini for extra vegetables.
  • Serve over rice, noodles, or cauliflower rice for a heartier meal.
  • Sriracha or chili flakes can be added for extra heat.
  • Store leftovers in the refrigerator for up to 3 days.
  • Freeze cooled portions for up to 3 months in airtight containers.
