Description

These Espresso Martini Bites are rich, fudgy no-bake treats made with Medjool dates, cashews, dark chocolate, and espresso for a luxurious coffee-chocolate flavor combination. Perfect for dessert platters, parties, or afternoon snacks, these bite-sized truffle-like treats are naturally sweetened, easy to make, and require no baking.


Ingredients

  • 1 cup pitted Medjool dates, roughly chopped
  • 1 1/4 cups raw cashews
  • 1 teaspoon vanilla extract
  • 1 tablespoon finely ground espresso roast beans
  • 1/8 teaspoon salt
  • 1/2 cup dark chocolate chips
  • 2 to 3 tablespoons brewed espresso or strong coffee, cooled
  • 2 tablespoons unsweetened cocoa powder
  • Optional toppings: shaved dark chocolate, flaky sea salt, crushed espresso beans, white chocolate drizzle, or finely chopped nuts

Instructions

  1. Add the chopped Medjool dates, cashews, vanilla extract, ground espresso beans, salt, and dark chocolate chips to a food processor.
  2. Pulse several times until the ingredients become crumbly and begin sticking together.
  3. Slowly add 2 tablespoons of brewed espresso or strong coffee and blend again until a soft sticky dough forms. Add more coffee if needed.
  4. Scoop slightly less than 1 tablespoon of the mixture and roll into smooth bite-sized balls.
  5. Place the cocoa powder into a shallow bowl and roll each bite until evenly coated.
  6. Arrange the bites on a parchment-lined tray or plate.
  7. Refrigerate for 10 to 15 minutes until chilled and firm.
  8. Serve cold with optional toppings if desired.

Notes

  • Instant espresso powder can replace ground espresso beans.
  • Store chilled for the best fudgy texture and flavor.
  • Add extra brewed coffee gradually if the mixture feels too dry.
  • Cashews can be replaced with walnuts, pecans, or sunflower seeds.
