Description

A soft and custard-like French coconut pie with a golden top and rich, sweet coconut flavor, perfect as a comforting and easy homemade dessert.


Ingredients

  • 1 1/2 cups shredded sweetened coconut
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 unbaked 9-inch pie crust

Instructions

  1. Preheat oven to 180°C (350°F) and prepare a 9-inch pie dish with the unbaked crust.
  2. In a large bowl, mix shredded coconut, sugar, flour, baking powder, and salt.
  3. In another bowl, whisk eggs until smooth, then add milk, melted butter, and vanilla extract. Mix well.
  4. Gradually combine the wet ingredients with the dry ingredients, stirring until fully incorporated.
  5. Pour the mixture into the prepared pie crust and spread evenly.
  6. Bake for 40–45 minutes until the top is golden brown and the center is set but slightly soft.
  7. Remove from oven and allow to cool completely before slicing.
