Ingredients
- 1 1/2 cups shredded sweetened coconut
- 1 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 3/4 cup milk
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 unbaked 9-inch pie crust
Instructions
- Preheat oven to 180°C (350°F) and prepare a 9-inch pie dish with the unbaked crust.
- In a large bowl, mix shredded coconut, sugar, flour, baking powder, and salt.
- In another bowl, whisk eggs until smooth, then add milk, melted butter, and vanilla extract. Mix well.
- Gradually combine the wet ingredients with the dry ingredients, stirring until fully incorporated.
- Pour the mixture into the prepared pie crust and spread evenly.
- Bake for 40–45 minutes until the top is golden brown and the center is set but slightly soft.
- Remove from oven and allow to cool completely before slicing.

- Let the pie cool fully to allow the filling to set properly.
- Use coconut milk for a richer coconut flavor.
- Reduce sugar slightly if you prefer a less sweet dessert.
