Description

These easy French Toast Roll-Ups are a fun handheld breakfast made with soft bread wrapped around savory sausage links, dipped in a sweet cinnamon vanilla batter, and cooked until golden brown. Perfect for busy mornings, brunches, or freezer-friendly meal prep.

Ingredients

  • 10 slices soft sandwich bread
  • 10 fully cooked sausage links
  • 3 large eggs
  • 1/2 cup milk
  • 3 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 2 tablespoons butter, for greasing the skillet
  • Maple syrup, for serving

Instructions

  1. Flatten each slice of bread using a rolling pin or the palm of your hand. Trim crusts if desired.
  2. Place one cooked sausage link on the edge of each bread slice and roll tightly. Set seam-side down.
  3. In a shallow dish, whisk together eggs, milk, sugar, cinnamon, vanilla extract, and flour until smooth.
  4. Heat a large skillet or griddle over medium heat and grease with butter.
  5. Dip each roll-up into the egg mixture, coating all sides evenly.
  6. Allow excess batter to drip off before placing the roll-up onto the hot skillet.
  7. Cook for several minutes, turning gently every minute, until all sides are golden brown and slightly crisp.
  8. Transfer to a serving plate and serve warm with maple syrup for dipping.

Notes

  • Soft sandwich bread works best because it rolls easily without cracking.
  • Flattening the bread helps the roll-ups stay tightly sealed.
  • Cooked sausage links should be fully cooled before rolling to avoid tearing the bread.
  • Do not overcrowd the skillet to ensure even browning.
  • The flour in the batter helps create a thicker coating for crispier roll-ups.
  • These roll-ups freeze well and can be reheated directly from frozen.
  • Serve with fresh fruit, yogurt, or scrambled eggs for a complete breakfast.
