Description
Frijoles Puercos is a creamy and flavorful Mexican-style bean dish made with refried beans, smoky turkey sausage, melted cheese, and savory seasonings for a comforting and satisfying meal.
Ingredients
- 500 g cooked pinto beans
- 300 g refried beans
- 200 g halal turkey sausage or beef sausage, sliced or crumbled
- 150 g smoked turkey strips, chopped
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 jalapeño pepper, chopped
- 1 medium tomato, diced
- 200 g shredded cheddar cheese or Mexican cheese blend
- 1 tablespoon vegetable oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh cilantro (optional)
- Warm tortilla chips or bread for serving
Instructions
- Heat a large skillet over medium heat and cook the chopped smoked turkey strips until lightly crispy.
- Remove part of the smoked turkey for garnish, leaving some oil in the pan.
- Add the turkey sausage or beef sausage and cook until browned and fully cooked.
- Stir in the onion, garlic, and jalapeño pepper and cook for about 4 minutes until softened.
- Add the diced tomato and cook for another 3 to 4 minutes until softened.
- Lightly mash the pinto beans and add them to the pan along with the refried beans.
- Stir everything together and simmer on low heat for 8 to 10 minutes, stirring occasionally.
- Add a splash of water or broth if the mixture becomes too thick.
- Mix in most of the shredded cheese and half of the crispy smoked turkey strips.
- Stir until the cheese melts and the mixture becomes creamy.
- Season with salt and black pepper to taste.
- Transfer to a serving dish and top with remaining cheese, smoked turkey strips, and cilantro if desired.
- Serve warm with tortilla chips, bread, or grilled dishes.
Notes
- Canned pinto beans work well and save time.
- Add extra jalapeños or chili flakes for more heat.
- Black beans can replace pinto beans for a different flavor.
- Add water or broth while reheating if the beans become too thick.
- Store leftovers in the refrigerator for up to 4 days.
