Description

These Ground Beef Lettuce Wraps are a quick and flavorful low-carb meal made with savory ground beef, crisp lettuce, and a simple homemade sauce.

Ingredients

  • 2 pounds lean ground beef
  • 1/2 onion, diced
  • 1/2 cup grated carrots
  • 2 teaspoons minced garlic
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground ginger
  • 1 tablespoon rice vinegar
  • 1/2 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 green onions, sliced
  • 1/2 tablespoon sesame seeds
  • 1 head butter lettuce or bib lettuce

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Add the ground beef and cook until browned, breaking it apart as it cooks.
  3. Drain excess grease from the skillet.
  4. Add the diced onion and grated carrots to the skillet and cook for 3 to 4 minutes until softened.
  5. Stir in the minced garlic, black pepper, ground ginger, and rice vinegar.
  6. Cook for 1 minute until fragrant.
  7. In a small bowl, whisk together the soy sauce and brown sugar.
  8. Pour the sauce into the skillet and stir to coat the beef mixture evenly.
  9. Reduce heat to medium and simmer for 2 to 3 minutes until the sauce slightly thickens.
  10. Stir in the sliced green onions.
  11. Separate and wash the lettuce leaves thoroughly, then pat dry.
  12. Spoon the warm beef mixture into the lettuce leaves.
  13. Sprinkle sesame seeds on top and serve immediately.

Notes

  • Butter lettuce and bib lettuce work best because they are soft and flexible.
  • Drain excess grease well to avoid soggy wraps.
  • Coconut aminos can replace soy sauce for a gluten-free option.
  • Ground turkey or chicken can be substituted for beef.
  • Store the filling separately from the lettuce for best freshness.
  • The beef filling freezes well for up to 3 months.
