Ingredients
- 12 vanilla wafer cookies
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 cup fresh or frozen raspberries
- 2 tablespoons granulated sugar (for raspberry mixture)
Instructions
- Preheat oven to 175°C (350°F) and line a muffin tin with cupcake liners.
- Place one vanilla wafer cookie at the bottom of each liner to form the crust.
- In a large bowl, beat cream cheese until smooth and creamy.
- Add sugar and mix until fluffy and well combined.
- Add eggs one at a time, mixing gently after each addition.
- Stir in vanilla extract and sour cream until smooth.
- In a small saucepan, cook raspberries with 2 tablespoons sugar over medium heat until thickened. Let cool slightly.
- Fill each liner with cheesecake batter about 3/4 full.
- Add a spoonful of raspberry sauce on top and swirl gently with a toothpick.
- Bake for 18–22 minutes until centers are set but slightly jiggly.
- Cool at room temperature, then refrigerate for at least 2 hours before serving.
