Instructions
- In a bowl, combine graham cracker crumbs, brown sugar, melted butter, and cinnamon until evenly moistened.
- Spoon about 2 tablespoons of the crust mixture into each dessert cup and press gently into the bottom.
- In a mixing bowl, beat softened cream cheese until smooth.
- Add powdered sugar, vanilla extract, and lemon juice, then mix until creamy.
- In a separate bowl, whip the cold heavy cream until fluffy peaks form.
- Fold the whipped cream into the cream cheese mixture until smooth and light.
- In a skillet over medium heat, melt butter and add diced apples, brown sugar, cinnamon, nutmeg, and lemon juice.
- Cook for 6 to 8 minutes, stirring often, until apples soften.
- Mix cornstarch with water and stir into the apples. Cook for 1 minute until slightly thickened, then let cool.
- Layer cheesecake filling over the crust in each cup.
- Spoon the cinnamon apple mixture over the cheesecake layer.
- Drizzle caramel sauce on top and sprinkle with extra graham cracker crumbs if desired.
- Chill for at least 1 hour before serving.
