Description

This homemade strawberry puree is fresh, fruity, and naturally sweet with vibrant strawberry flavor in every spoonful. Made with simple ingredients and blended until smooth, it’s perfect for cocktails, mocktails, lemonades, smoothies, desserts, pancakes, yogurt, and frozen treats.


Ingredients

  • 4 1/2 cups fresh strawberries, stems removed
  • 1/2 cup granulated sugar
  • 2 teaspoons lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 pinch salt

Instructions

  1. Wash the strawberries thoroughly under cool water. Remove the stems and cut the strawberries into halves or quarters.
  2. If using frozen strawberries, thaw them completely and drain any excess liquid.
  3. Add the strawberries to a high-powered blender and blend for about 2 minutes until completely smooth.
  4. Add the granulated sugar, lemon zest, lemon juice, and salt to the blender.
  5. Blend again for another 30 seconds until fully combined.
  6. Place a fine mesh strainer over a large bowl and pour the strawberry mixture through it.
  7. Use the back of a spoon to press the puree through the strainer to remove seeds and zest pieces.
  8. Transfer the strained puree into an airtight container or squeeze bottle.
  9. Refrigerate until chilled before serving.
  10. Use in cocktails, mocktails, lemonades, smoothies, desserts, or frozen treats.

  • Frozen strawberries can be used if thawed and drained first.
