Ingredients
- 1 cup water
- 2 tablespoons fresh lemon juice
- 2 tablespoons honey
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground ginger
- 2 1/2 tablespoons unflavored gelatin
Instructions
- Pour water into a small saucepan and sprinkle gelatin evenly over the surface. Let sit for 5 minutes to bloom.
- Place saucepan over low heat and stir gently until gelatin fully dissolves. Do not boil.
- Add lemon juice, honey, turmeric, and ginger. Whisk until smooth and fully combined.
- Pour mixture into silicone molds or a lined dish.
- Refrigerate for 2–3 hours until firm.
- Remove from molds or cut into squares if using a dish.
- Store chilled until ready to serve.

- Do not overheat gelatin to ensure proper setting.
- Add lemon zest for stronger citrus flavor.
- Adjust honey for sweetness preference.
- A pinch of black pepper can enhance flavor depth.
