Ingredients

  • 24 ounces boneless chicken breasts
  • 1/2 cup all-purpose flour
  • 4 tablespoons butter
  • 2 tablespoons canola oil
  • 1 tablespoon butter

  • 1/2 cup non-alcoholic apple juice or broth
  • 3/4 cup chicken broth
  • 1/2 cup heavy cream
  • 2 teaspoons dried chives
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat a large skillet over medium heat and add canola oil.
  2. Dredge chicken breasts in flour, shaking off excess.
  3. Cook chicken in the skillet for 6–7 minutes per side until golden brown, then remove and set aside.
  4. Reduce heat slightly and add 1 tablespoon butter to the same skillet.
  5. Whisk in 1 tablespoon flour and cook for about 1 minute.
  6. Slowly pour in apple juice or broth, stirring and scraping up browned bits.
  7. Add chicken broth and bring to a gentle simmer.
  8. Stir in heavy cream and dried chives until smooth.
  9. Return chicken to the skillet, cover, and simmer for 10–15 minutes until fully cooked and tender.
  10. Season with salt and pepper to taste and serve warm.
