Ingredients
- 24 ounces boneless chicken breasts
- 1/2 cup all-purpose flour
- 4 tablespoons butter
- 2 tablespoons canola oil

Instructions
- Heat a large skillet over medium heat and add canola oil.
- Dredge chicken breasts in flour, shaking off excess.
- Cook chicken in the skillet for 6–7 minutes per side until golden brown, then remove and set aside.
- Reduce heat slightly and add 1 tablespoon butter to the same skillet.
- Whisk in 1 tablespoon flour and cook for about 1 minute.
- Slowly pour in apple juice or broth, stirring and scraping up browned bits.
- Add chicken broth and bring to a gentle simmer.
- Stir in heavy cream and dried chives until smooth.
- Return chicken to the skillet, cover, and simmer for 10–15 minutes until fully cooked and tender.
- Season with salt and pepper to taste and serve warm.
