Description

Ingredients

  • 1 large egg
  • Pinch of kosher salt

  • 1/4 teaspoon cinnamon, optional
  • 1/4 teaspoon garlic powder, optional
  • Chopped chives or Italian seasoning, optional
  • Keto maple syrup for serving, optional

Instructions

  1. Place the butter into a microwave-safe ramekin about 4 inches wide. Microwave for about 20 seconds until melted.
  2. Allow the butter to cool slightly.
  3. Add the egg and a pinch of kosher salt to the ramekin. Mix thoroughly with a fork until smooth.
  4. Stir in the almond flour until fully combined.
  5. Add the baking powder and mix until the batter is smooth and lump-free.
  6. If desired, stir in optional ingredients like cheese, cinnamon, garlic powder, or herbs.
  7. Microwave the ramekin for 90 seconds until the muffin rises and feels firm to the touch.
  8. Let the muffin cool for about 2 minutes before removing it from the ramekin.
  9. Invert onto a cutting board and slice in half horizontally.
  10. Toast both halves in a lightly greased skillet or toaster until golden brown. Serve warm with your favorite keto toppings.
