Description

A bright and balanced lemon balsamic vinaigrette with honey, Dijon, and olive oil, offering a smooth, slightly sweet and tangy flavor perfect for salads and marinades.

Ingredients

  • 1/4 cup (60 ml) balsamic vinegar
  • 1/4 cup (84 ml) honey
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons Dijon mustard
  • 2 garlic cloves, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 cup extra virgin olive oil

Instructions

  1. In a clean jar, combine balsamic vinegar, honey, lemon juice, Dijon mustard, garlic, salt, pepper, and oregano.
  2. Stir well until the honey is fully dissolved and ingredients are combined.
  3. Add the olive oil to the jar.
  4. Seal the jar tightly and shake vigorously for 1–2 minutes until emulsified.
  5. Check consistency; it should be smooth and slightly thick.
  6. Taste and adjust seasoning if needed.
  7. Use immediately or store in the refrigerator.

Notes

  • Shake before each use to maintain emulsification.
  • Fresh lemon juice gives the best flavor.
  • Adjust honey to balance acidity.
  • Finely mince garlic to avoid overpowering flavor.
  • Let sit at room temperature if it thickens in the fridge.
