A tangy and refreshing Southern-style shrimp dish marinated in a zesty blend of vinegar, olive oil, citrus, and spices, perfect for appetizers or light meals.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup olive oil
- 1/2 cup white vinegar
- 1 lemon, thinly sliced
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon pickling spice
- 1 teaspoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 tablespoons fresh parsley, chopped
Instructions
- Bring a pot of salted water to a boil and cook shrimp for 2–3 minutes until pink and opaque.
- Transfer shrimp to ice water to stop cooking, then drain and set aside.
- In a bowl, mix olive oil, vinegar, lemon slices, onion, garlic, pickling spice, red pepper flakes, salt, pepper, and paprika.
- Add shrimp to the marinade and toss to coat evenly.
- Stir in chopped parsley.
- Transfer to an airtight container and refrigerate for 12–24 hours.
- Stir gently before serving and serve chilled.
Notes
- Do not overcook shrimp to maintain a tender texture.
- Marinating longer enhances flavor but do not exceed 48 hours.
- Adjust spice level by reducing or increasing red pepper flakes.
- Apple cider vinegar can be used for a different flavor.
- Serve cold for best taste and texture.
