Description

A tangy and refreshing Southern-style shrimp dish marinated in a zesty blend of vinegar, olive oil, citrus, and spices, perfect for appetizers or light meals.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup olive oil
  • 1/2 cup white vinegar
  • 1 lemon, thinly sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon pickling spice
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Bring a pot of salted water to a boil and cook shrimp for 2–3 minutes until pink and opaque.
  2. Transfer shrimp to ice water to stop cooking, then drain and set aside.
  3. In a bowl, mix olive oil, vinegar, lemon slices, onion, garlic, pickling spice, red pepper flakes, salt, pepper, and paprika.
  4. Add shrimp to the marinade and toss to coat evenly.
  5. Stir in chopped parsley.
  6. Transfer to an airtight container and refrigerate for 12–24 hours.
  7. Stir gently before serving and serve chilled.

Notes

  • Do not overcook shrimp to maintain a tender texture.
  • Marinating longer enhances flavor but do not exceed 48 hours.
  • Adjust spice level by reducing or increasing red pepper flakes.
  • Apple cider vinegar can be used for a different flavor.
  • Serve cold for best taste and texture.
