Description

A juicy and flavorful low carb meatloaf made with lean ground beef, almond flour, parmesan cheese, and savory seasonings for a keto-friendly comfort food dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1/2 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 1/2 pounds lean ground beef
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 large egg
  • 1/4 cup shredded parmesan cheese
  • 1/4 cup almond flour
  • 1/3 cup low carb tomato sauce
  • 1 tablespoon brown sugar substitute

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking sheet or loaf pan with parchment or foil.
  2. Heat olive oil in a skillet over medium heat.
  3. Add onion and garlic and cook for 4–5 minutes until softened.
  4. Allow onion mixture to cool completely.
  5. In a large bowl, combine ground beef, Italian seasoning, salt, pepper, parsley, egg, parmesan cheese, almond flour, and cooled onion mixture.
  6. Mix gently until just combined without overmixing.
  7. Shape mixture into a loaf about 3 inches wide and 8 inches long.
  8. Place loaf on prepared baking sheet and bake uncovered for 30 minutes.
  9. Whisk together low carb tomato sauce and brown sugar substitute.
  10. Brush topping evenly over the partially baked meatloaf.
  11. Return to oven and bake another 30–40 minutes until internal temperature reaches 160°F (71°C).
  12. Rest for 5–10 minutes before slicing and serving.

Notes

  • Do not overmix the meat mixture to keep the meatloaf tender.
  • Almond flour replaces breadcrumbs to keep the recipe low carb.
  • Use a meat thermometer for accurate doneness.
  • Baking on a sheet pan helps excess grease drain away.
  • Ground turkey or chicken can be substituted for beef.
  • Freezes well both cooked and uncooked.
