Description

This No-Bake Pumpkin Spice Layered Dessert is a creamy and comforting fall-inspired treat made with layers of buttery graham cracker crust, fluffy pumpkin filling, creamy vanilla pudding, whipped topping, and rich caramel drizzle. Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 1 can (15 ounces) pumpkin puree
  • 2 packages (3.4 ounces each) vanilla instant pudding mix
  • 1 teaspoon pumpkin pie spice
  • 1 tub (8 ounces) whipped topping, thawed
  • 1 1/2 cups cold milk
  • 8 soft caramels
  • 1 tablespoon cold milk (for caramel sauce)

Instructions

  1. In a medium bowl, combine the graham cracker crumbs and melted butter until evenly coated.
  2. Press the crumb mixture firmly into the bottom of a 13×9-inch dish to form the crust.
  3. In a large bowl, whisk together the pumpkin puree, one package of vanilla pudding mix, and pumpkin pie spice until smooth.
  4. Fold in 2 cups of whipped topping until light and creamy.
  5. Spread the pumpkin mixture evenly over the crust layer.
  6. In another bowl, whisk together the remaining vanilla pudding mix and 1 1/2 cups cold milk for about 2 minutes until thickened.
  7. Carefully spread the pudding layer over the pumpkin mixture.
  8. Top with the remaining whipped topping and spread evenly.
  9. Cover and refrigerate for at least 4 hours until fully set.
  10. Before serving, microwave the soft caramels with 1 tablespoon milk in 30-second intervals, stirring until smooth.
  11. Drizzle the caramel sauce over the dessert just before serving.

  • Press the crust firmly using the bottom of a measuring cup to help it hold together.
