Description
A bold sweet-and-spicy pineapple jam with a vibrant tropical flavor and a gentle chili kick, perfect as a spread, glaze, or pairing with savory dishes.
Ingredients
- 3 cups fresh pineapple, finely chopped
- 2 cups granulated sugar
- 1/4 cup freshly squeezed lemon juice
- 1–2 teaspoons finely chopped red chili (adjust to taste)
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
Instructions
- Peel, core, and finely chop the pineapple into small pieces.
- In a large saucepan, combine pineapple, sugar, and lemon juice over medium heat.
- Stir until sugar dissolves and mixture becomes slightly liquid.
- Add chili, lemon zest, and salt; stir well.
- Bring to a gentle boil, then reduce heat to medium-low.
- Simmer for 20–25 minutes, stirring occasionally, until thickened and glossy.
- Optional: mash slightly for a smoother consistency.
- Test doneness using the chilled plate method.
- Remove from heat and let cool slightly.
- Transfer to clean jars while warm and cool completely before sealing.
Notes
- Adjust chili to control heat level.
- Use fresh pineapple for best flavor, though canned (in juice) can work.
- Stir regularly to prevent sticking or burning.
- Blend partially for a smoother texture if desired.
- Follow proper canning methods for long-term storage.
