Description
A hearty Pueblo Colorado-style smothered cheeseburger topped with melted cheese and rich green chile gravy, served with fries or mashed potatoes for the ultimate comfort food meal.
Ingredients
- 1 1/2 lbs ground beef
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 4 burger buns
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 cup roasted Pueblo green chiles, chopped
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 teaspoon cumin
- 1/2 teaspoon oregano
- Salt and pepper to taste
- 2 cups shredded cheddar cheese
- 1 cup Monterey Jack cheese
- Fresh chopped parsley for garnish
- French fries or mashed potatoes, optional for serving
Instructions
- In a large bowl, combine ground beef, garlic powder, onion powder, smoked paprika, salt, black pepper, and Worcestershire sauce.
- Divide the mixture into 4 patties and press a small indentation into the center of each.
- Heat a skillet or grill pan over medium-high heat and cook patties for 4 to 5 minutes per side until fully cooked.
- During the last minute of cooking, top patties with cheddar and Monterey Jack cheese and cover briefly to melt.
- For the green chile gravy, melt butter in a saucepan over medium heat.
- Add diced onion and cook until softened, about 4 minutes.
- Stir in minced garlic and cook for 30 seconds.
- Whisk in flour and cook for 1 minute to form a roux.
- Slowly pour in beef broth while whisking continuously.
- Add chopped green chiles, cumin, oregano, salt, and pepper.
- Simmer for 10 to 12 minutes until thickened.
- Toast burger buns if desired.
- Place burgers on buns or plates and spoon green chile gravy generously over the top.
- Serve hot with fries or mashed potatoes and garnish with parsley.

- Pepper Jack cheese can be substituted for extra spice.
- Canned roasted green chiles work well if Pueblo chiles are unavailable.
