Roasted Delicata Squash is a simple and flavorful side dish featuring tender caramelized squash slices coated with buttery sage seasoning and crispy parmesan cheese.
Ingredients
- 2 medium delicata squash
- 1/4 cup salted butter, melted
- 2 teaspoons chopped fresh sage
- 2 teaspoons seasoned salt
- 1/2 teaspoon ground black pepper
- 1/2 cup grated parmesan cheese
Instructions
- Preheat the oven to 425°F (220°C).
- Wash the delicata squash thoroughly since the skin is edible.
- Slice each squash in half lengthwise and scoop out the seeds.
- Cut the squash crosswise into 1-inch thick half-moon slices.
- Place the squash slices into a large mixing bowl.
- Pour the melted butter over the squash and toss to coat evenly.
- Add the chopped sage, seasoned salt, and black pepper, then toss again.
- Sprinkle the grated parmesan cheese over the squash and gently mix.
- Arrange the squash slices in a single layer on an unlined baking sheet.
- Roast for 25 to 30 minutes, flipping halfway through cooking.
- Remove from the oven once the squash is golden brown and tender with crispy edges.
- Allow to cool slightly before serving warm or at room temperature.

- Delicata squash skin is edible and softens during roasting.
- Avoid overcrowding the pan to help the squash crisp properly.
