Ingredients

  • 1 cup unsalted shelled pistachios
  • 2 tablespoons extra virgin olive oil
  • Juice of 1/2 fresh lemon
  • 1/4 cup mascarpone cheese
  • 4 fresh basil leaves
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon black pepper, or to taste
  • 1 to 2 tablespoons water, if needed for thinning

Instructions

  1. Bring a small pot of water to a boil and blanch the pistachios for 20 to 30 seconds.
  2. Drain immediately and rinse under cold water to stop the cooking process.
  3. Spread the pistachios on a clean towel and gently rub off the thin brown skins.
  4. Transfer the peeled pistachios to a food processor.
  5. Blend for about 2 minutes until finely ground and beginning to release natural oils.
  6. Add the olive oil, mascarpone cheese, lemon juice, basil leaves, salt, and black pepper.
  7. Continue blending until the mixture becomes thick and creamy.
  8. Process for another few minutes until silky smooth.
  9. Add water one tablespoon at a time if needed to thin the spread to your preferred consistency.
  10. Taste and adjust seasoning if necessary.
  11. Serve immediately or refrigerate in an airtight container until ready to use.
