Description

Soft and moist zucchini muffins flavored with cinnamon, nutmeg, vanilla, and brown sugar for a cozy homemade treat perfect for breakfast, snacks, or dessert.


Ingredients

  • 1 and 3/4 cups all-purpose flour or whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup vegetable oil or melted coconut oil
  • 1/2 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons milk
  • 1 and 3/4 cups shredded zucchini
  • 1 cup semi-sweet chocolate chips or chopped nuts (optional)
  • Coarse sugar for topping (optional)

Instructions

  1. Preheat oven to 425°F (218°C) and prepare a 12-count muffin pan with liners or nonstick spray.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk together oil, granulated sugar, brown sugar, eggs, vanilla extract, and milk until smooth.
  4. Stir shredded zucchini into the wet ingredients.
  5. Add wet ingredients to dry ingredients and mix gently until just combined.
  6. Fold in chocolate chips or nuts if using.
  7. Divide batter evenly among muffin cups, filling nearly to the top.
  8. Sprinkle coarse sugar on top if desired.
  9. Bake at 425°F (218°C) for 5 minutes.
  10. Without opening the oven, reduce temperature to 350°F (177°C) and bake for 15–17 more minutes until a toothpick comes out clean.
  11. Cool muffins in the pan for 5 minutes before transferring to a wire rack.

Notes

  • Do not overmix the batter to keep muffins soft and fluffy.
  • No need to squeeze moisture from the zucchini.
  • Whole wheat flour can be used for a heartier texture.
  • Chocolate chips, nuts, raisins, or dried cranberries make great additions.
  • The high starting oven temperature helps create tall muffin tops.
  • Freeze cooled muffins for up to 3 months.
