Description
Soft and fluffy homemade Arabic bread, also known as Kuboos, with a beautiful puffed pocket that is perfect for wraps, dipping, or serving alongside savory dishes.
Ingredients
- 4 cups wheat flour
- 1 cup warm milk
- 1/2 cup warm water
- 1/2 teaspoon instant yeast
- 1 dessert spoon sugar
- 1 tablespoon oil
- 1 teaspoon salt
Instructions
- In a small bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until slightly foamy.
- In a large bowl, mix wheat flour and salt.
- Add yeast mixture, warm milk, and oil to the flour mixture.
- Mix until a soft dough forms.
- Knead for 8–10 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise for 1–1½ hours until doubled in size.
- Punch down dough and divide into 8 equal portions.
- Shape into balls, cover, and let rest for 15 minutes.
- Roll each ball into a round disc about 1/4 inch thick.
- Heat a skillet, tawa, or oven to high heat.
- Cook each bread for 1–2 minutes until bubbles appear, then flip and cook until puffed and lightly golden.
- Cover cooked bread with a clean towel to keep soft and warm.
Notes
- High heat is important for proper puffing.
- Cover cooked bread immediately to retain softness.
- Can be baked in a very hot oven for extra puff.
- Freeze with parchment between breads for easy storage.
- Add yogurt for an even softer texture.
