Description
Light and tender homemade strawberry pop-tarts made with whole wheat pastry dough and a naturally sweet strawberry filling, perfect for a wholesome breakfast or snack.
Ingredients
- 1 1/2 cups whole wheat pastry flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons light butter, cold and cubed
- 1/2 cup plain nonfat Greek yogurt
- 1 cup fresh strawberries, finely chopped
- 1 tablespoon cornstarch
- 2 tablespoons zero-calorie sweetener
- 1 teaspoon lemon juice
Instructions
- Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a bowl, mix flour, baking powder, and salt.
- Add cold butter and rub into flour until crumbly.
- Stir in Greek yogurt to form a soft dough.
- Roll dough into a thin rectangle and cut into 16 equal rectangles.
- In a saucepan, cook strawberries, cornstarch, sweetener, and lemon juice until thickened. Let cool.
- Spoon filling onto 8 rectangles, leaving space at edges.
- Top with remaining rectangles and seal edges with a fork.
- Place on baking sheet and bake for 20 minutes until lightly golden.
- Cool before serving.
Notes
- Do not overfill to prevent leakage.
- Seal edges firmly using a fork.
- Use frozen strawberries if needed, but drain well.
- Add glaze if desired for extra sweetness.
- Store in airtight container for freshness.
- Reheat in oven or air fryer for crisp texture.
