Description

Light and tender homemade strawberry pop-tarts made with whole wheat pastry dough and a naturally sweet strawberry filling, perfect for a wholesome breakfast or snack.


Ingredients

  • 1 1/2 cups whole wheat pastry flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons light butter, cold and cubed
  • 1/2 cup plain nonfat Greek yogurt
  • 1 cup fresh strawberries, finely chopped
  • 1 tablespoon cornstarch
  • 2 tablespoons zero-calorie sweetener
  • 1 teaspoon lemon juice

Instructions

  1. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour, baking powder, and salt.
  3. Add cold butter and rub into flour until crumbly.
  4. Stir in Greek yogurt to form a soft dough.
  5. Roll dough into a thin rectangle and cut into 16 equal rectangles.
  6. In a saucepan, cook strawberries, cornstarch, sweetener, and lemon juice until thickened. Let cool.
  7. Spoon filling onto 8 rectangles, leaving space at edges.
  8. Top with remaining rectangles and seal edges with a fork.
  9. Place on baking sheet and bake for 20 minutes until lightly golden.
  10. Cool before serving.

Notes

  • Do not overfill to prevent leakage.
  • Seal edges firmly using a fork.
  • Use frozen strawberries if needed, but drain well.
  • Add glaze if desired for extra sweetness.
  • Store in airtight container for freshness.
  • Reheat in oven or air fryer for crisp texture.
