Description

A creamy no-bake strawberry shortcake ice cream cake layered with vanilla ice cream, strawberry sorbet, buttery cookie crumbles, and crunchy freeze-dried strawberries for a nostalgic frozen dessert.


Ingredients

  • 1.4 liters vanilla ice cream, softened slightly
  • 470 milliliters strawberry sorbet or strawberry ice cream, softened slightly
  • 300 grams shortbread finger cookies
  • 22 grams freeze-dried strawberries

Instructions

  1. Line an 8-inch round cake pan or deep freezer-safe container with plastic wrap, leaving extra hanging over the edges.
  2. Crush the freeze-dried strawberries into small crumbs using your hands and place them in a bowl.
  3. Chop the shortbread cookies into pea-sized pieces and mix them with the crushed strawberries.
  4. Sprinkle a thin layer of the crumble mixture into the bottom of the prepared pan.
  5. Spread half of the softened vanilla ice cream evenly over the crumble layer.
  6. Freeze for 30 minutes until firm.
  7. Spread the strawberry sorbet or strawberry ice cream evenly over the vanilla layer.
  8. Freeze again for another 30 minutes.
  9. Spread the remaining vanilla ice cream over the strawberry layer and smooth the top.
  10. Sprinkle additional crumble mixture over the top, reserving some for the sides later.
  11. Cover tightly and freeze overnight until fully firm.
  12. Lift the frozen cake from the pan using the plastic wrap.
  13. Press the reserved crumble mixture onto the sides of the cake.
  14. Slice with a warm knife and serve immediately.
