Description

Tender chicken breasts stuffed with Swiss cheese, coated in a savory Parmesan crust, seared until golden, and slow-cooked in a creamy chicken sauce.

Ingredients

  • 6 boneless skinless chicken breast halves, about 8 ounces (225 g) each
  • 6 slices Swiss cheese
  • 1/4 cup all-purpose flour (30 g)
  • 1/4 cup grated Parmesan cheese (25 g)
  • 1/2 teaspoon rubbed sage
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 cup canola oil (60 ml)
  • 1 can condensed cream of chicken soup, 10-3/4 ounces (305 g)
  • 1/2 cup chicken broth (120 ml)
  • 2 tablespoons chopped fresh parsley, optional

Instructions

  1. Place each chicken breast between two sheets of plastic wrap and pound to about 1/4-inch (0.6 cm) thickness.
  2. Place one slice of Swiss cheese on each chicken breast.
  3. Roll each chicken breast tightly, tucking in the sides to enclose the cheese, then secure with toothpicks.
  4. In a shallow bowl, combine flour, Parmesan cheese, rubbed sage, paprika, and black pepper.
  5. Coat each chicken roll evenly in the flour mixture.
  6. Heat canola oil in a large skillet over medium-high heat.
  7. Sear the chicken rolls until golden brown on all sides.
  8. Transfer the browned chicken rolls to a slow cooker.
  9. Whisk together condensed cream of chicken soup and chicken broth until smooth.
  10. Pour the sauce over the chicken rolls.
  11. Cover and cook on low for 4 to 5 hours, until the chicken is tender and reaches 75°C internally.
  12. Remove toothpicks before serving and garnish with chopped parsley if desired.

Notes

  • Secure the rolls well with toothpicks to help prevent them from opening during cooking.
  • Make sure the cheese is fully enclosed to reduce leaking.
  • You can assemble the rolls up to 24 hours ahead and refrigerate before cooking.
  • For oven cooking, place seared rolls in a baking dish, cover with sauce, and bake at 180°C for 35 to 45 minutes.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze cooked leftovers for up to 3 months and thaw overnight before reheating.
